I have used wood chips for many years to smoke meats and fish. I have a hot smoker. These pellets work much better. These pellets produce much more smoke at a lower temperature allowing much more of the wood flavor to enter the product you are smoking. I mix cherry wood with Hickory pellets on meats for a fuller flavor.
